25g butter 1 chopped onion 1 clove of garlic, crushed 2 sliced carrots 1.5 litres of vegetable stock 2 bay leaves 2 sprigs of thyme 1 finely chopped celery stick 2 green bananas cut into 4 pieces 17g of white yam peeled and cubed 25g red lentils 25g of macaroni Salt and pepper to garnish Chopped spring onions to garnish
1. melt the butter and fry the onion, garlic and carrots for a few minutes, stirring occasionally until beginning to soften. Add the stock, bay leaves and thyme and bring to the boil.
2. Add the celry, green bananas, white yam, lentils and macaroni. Season and simmer for 25 minutes or until the vegetables are cooked. Serve garnished with salt, pepper and chopped spring onions.
