1 diced onion 8 tablespoons of butter Half a cup of flour 2 teaspoons of dried mustard 1 teaspoon of black pepper 8 cups of vegetable stock 1 cup of diced carrots 5 cups of diced potatoes 2 cups of milk 2 cups of cream 6 cups of grated white cheese
1. Saute the onions in butter. Add flour, dry mustard and pepper and stir for for 3 minutes. Add the vegetable stock, carrots and potato and bring to the boil. Once boiling, reduce the heat and simmer for 30 minutes.
2. Add the milk, cream and cheese, cook for 5 minutes and add salt to taste.
