Recipe Name Cucumber cream soup

Ingredients 1 large cucumber
2 tablespoons of finely chopped chives OR 1 tablespoon of finely chopped spring onions.
285ml yoghurt
140ml thin cream
Half a lemon
Salt and pepper 
Preparation 1. Chop a large peeled cucumber very finely. Put into a basin with 2 tablespoons of finely chopped chives OR one tablespoon of finely chopped spring onion.

2. Add plenty of salt and pepper, a good squeeze of lemon juice and 285ml of yoghurt: leave to stand for 1 hour.

3. Gradually blend in 140ml of thin cream, then taste and add more seasoning and lemon juice.

4. Chill thoroughly and serve with tiny croutons.
